About this item
A whole fish, scaled and gutted, with the bright silver flank and faint gold wash that gives it its name. The flesh is fine-grained, sweet and unusually low in small bones, which makes it one of the easiest fish to serve whole at a table. Steam it with ginger and a splash of Shaoxing, pan-fry it until the skin crisps, or braise it in a shallow pan of soy and rock sugar. Cooked either way the meat lifts cleanly away from the backbone in moist, neat flakes.
